Roasted Garlic

A few weeks ago I made something that was so awesome (albeit stinky) that I have to share, even though the picture I took is not very good. Oven-roasted garlic. Yes. What happened was, my roommate, Gina got a giant bag of garlic as a Valentine's day present from her boyfriend, and it has started growing sprouts, so we were brainstorming things to do with it, and I remembered that I had gotten a bread board at La Bodega once which came with a large head of soft, spreadable garlic that was absolutely delicious. So we have begun to make it whenever people come over. The slow oven roasting makes the garlic smooth and spreadable, and deepens the flavor, while cutting the edge off of it as well. It's great on french bread, steak, or anything you would add garlic to. You can also blend it with butter for a perfect garlic butter.



Roasted Garlic
prep time: 5-10 min; cook time: 20-30 min

Ingredients:
1 head of garlic
Sprinkling of olive oil
Freshly ground salt and pepper
Tin foil
Muffin tin or baking sheet

Directions:
  • Preheat oven to 400 degrees F.
  • Cut the very top off of the head of garlic so the tops of the cloves are showing.
  • Place the clove into a muffin tin, sprinkle with olive oil, and cover with tin foil.
  • Roast in the oven at 400 degrees F for 20-30 min, until soft to the touch. If you like a bit of bite in your garlic, it should only need to roast about 20 minutes, but if you just want it full and creamy, you will probably want it in for 30 minutes.
