Iced Sugar Cookies


These are my absolute favourite of my grandma's Christmas cookies, and I try to make them every year! The secret is not to over bake the cookies, as they are best when still soft. Also, do not skip the vanilla in either the cookies or icing, as it really makes the flavour.

Cookies:
  • 2 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 3/4 cup butter
  • 1 cup sugar
  • 2 eggs, well beaten
  • 1 tsp vanilla

Icing:
  • 1/2 cup Butter
  • Icing sugar - about a half a bag?
  • 1-2 tbsp Milk 
  • 2 tsp vanilla extract
  • Sprinkles, to decorate
Directions:
  1. In a small bowl, whisk together all dry ingredients.
  2. In a large bowl, cream together the butter and sugar. 
  3. Beat in the eggs and vanilla
  4. Stir in the dry ingredients in 2-3 batches.
  5. Chill the dough in the fridge for 1 hour or up to overnight.
  6. Roll out, cut into shapes as desired, and bake in a 350 degrees oven for appx 8 minutes, or until just a touch brown at the bottom (if you life up a cookie) and still soft.
  7. Let cool before icing.
  8. To make icing, soften the butter, and then cream in as much icing sugar until it just starts to separate into little balls. Add 1 tbsp of milk, and mix in more icing sugar until it is a nice, spreadable consistency.
  9. Ice the cookies and decorate with sprinkles. These are great cookies to have kids decorate as well.
